In our continuing efforts to create a community of cancer philanthropy and awareness we are proud to announce our newest fundraising project. This cookbook is a chance for members and supporters of the SMAC community to recognize our cancer survivors and to remember in our hearts and homes those whom we have lost and to the fighters today of this terrible disease.

Sample Recipes:

In loving memory of Jerry Brown Lung Cancer

Ingredients:
1 1/2 cups all purpose flour
3/4 tsp baking soda
1/4 tsp salt
1 4 oz package sweet baking chocolate
1 cup sugar
3 eggs
1 tsp vanilla
3/4 cup buttermilk

1. Grease 2 9 inch pans lightly
2. in saucepan combine chocolate and 1/2 cup water. Cook and stir over low heat until melted.
3. Beat all above ingredients together with electric mixer and pour into prepared pans.
4. Bake at 350 degrees for 30 minutes or until wooden toothpick comes out clean. Cool approx 10 minutes and top with frosting.

Coconut pecan Frosting:
      In a saucepan slightly beat 1 egg. Stir in one 5 ounce can evaporated milk,2/3 cup sugar, and 1/4 cup butter. Cook and stir over medium heat about 12 minutes or until thickened and bubbly. Remove from heat, stir in 1-1/3 cups flaked coconut and 1/2 cup chopped pecans. Cover and cool thoroughly.
